Here is one of the delicious recipes from the Dr. Bech’s Go Green Diet:
Paneer –home made sweet cheese – in three minutes
- 1 litre (35 fl oz or ¼ US gallon) full fat milk
- 1/3 litre (12 fl oz or 1.5 cups) of full fat Yoghurt
- Boil until the milk rises in the pot.
- Add the yoghurt.
- Leave it on the stove for a few minutes at the same heat.
- Make sure it is neither too soft nor too thick.
- It is an art to remove the pot from the stove at the right moment!
- Pour the mixture through a sieve.
- The liquid that is surplus from the process is called whey and it is healthy.
- Enjoy the whey fresh and warm, as a drink in between meals. It has a high content of protein.
Do not cool it, or keep it for later or for the next day.
- The solid white mass that remains is called paneer and is a delicious sweet cheese.
- Eat the paneer warm on a sandwich, with lettuce and slices of cucumber.
- Serve the paneer as a side dish to a warm meal.
- Slice the paneer thinly, and fry in a pan in virgin cold pressed coconut oil. Serve with wild blueberries. Allow frozen wild blueberries to thaw, then add raw (unheated) honey and serve. Or use homemade organic blackcurrant jam.
- Cut the paneer in cubes and add to salads, stews, casseroles or sauces.

About the Author
Dr. Charlotte Bech, medical doctor, Doctor of the Science of Creative Intelligence and teacher of Transcendental Meditation. She has previously worked in the area of haematology at the most renowned hospital in Denmark (Rigshospitalet), has specialized in Maharishi AyurVeda and Vedic Medicine since 1983, and written a thesis on prevention and treatment of cancer in Maharishi AyurVeda.
She is currently running a private clinic in Copenhagen Denmark with emphasis on prevention and development of consciousness, giving courses for medical doctors on prevention, being a columnist in several national magazines on ayurvedic topics, and author of a book on Maharishi AyurVeda, and is Vice President for the European Ayurveda Medical Association (EURAMA). She has taught at the medical school in Copenhagen for several years.
